MUNG BEAN

The Mung Bean (Vigna radiata), also known as moong bean or green gram is one of the legumes with the highest protein content of its family and is higher yielding than other beans.
Currently the most common use of these “green beans“ is sprouting, resulting in the so-called “dragon teeth”, sprouted soy, soybean sprouts, or simply soy, commonly used in Asian cuisine.
